Smoked Turkey Salad

If you happen to have smoked turkey meat lying around (from say, leftover Smoked Turkey Legs), this salad packed with chopped apples and toasted pecans could and should be where it ends up. Don't forget to add plenty of pepper ... turkey loves pepper.

  • 2 smoked turkey legs
  • 1/4 cup mayonnaise
  • 1/4 cup diced celery
  • 1/4 cup diced apple
  • 1 tablespoon toasted and chopped pecans
  • 1 teaspoon rice wine vinegar
  • 1 teaspoon finely chopped parsley
  • 1/4 teaspoon freshly ground black pepper

Procedure

  • Remove the skins from the smoked turkey legs, pull off the meat and chop into 1/2-inch cubes. Transfer to a medium bowl.
  • Add the mayonnaise, celery, apple, pecans, vinegar, parsley, and black pepper. Stir to combine and serve.
