  • 16 ounces superfine sugar
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon kosher salt

Procedure

  • In the bowl of a stand mixer fitted with the paddle attachment, combine egg whites, cream of tartar, and salt on low speed; continue mixing on low as you stream in the sugar. Once the sugar is worked in, increase speed to medium high and beat until a frosting-like consistency is achieved, about 4 minutes. If a thinner consistency is desired, add water or rum. Store in an airtight container until ready to use (or it will dry out and set).
