This frothy, foamy coffee drink really took off on the interwebs in the early part of the COVID outbreak of '20. It's named for a Korean candy called Dalgona, a honeycomb-style candy made with melted sugar and baking soda. The coffee drink doesn't taste anything like the candy but it sure looks like it.Make sure to use instant coffee or espresso (I prefer espresso for the flavor) — its concentration means that the surfactants in the coffee can really go to work while you're whipping the drink, making it possible to get a smooth, stable foam.You will likely make a huge mess when you make this. 2tablespoons plus 2 teaspoonsinstant espresso powder
6fluid ounceswhole milk, for serving

Combine the water and sugar in a large bowl with high sides. Swirl the bowl until the sugar dissolves.
Add the espresso and vanilla to the sugar syrup, then, using a handheld electric mixer on medium speed, beat the mixture until it turns very light brown and has formed a thick, stable foam, 5 to 10 minutes.
Pour the milk into a tall glass, then top with the espresso foam. Serve with a spoon and a straw.
