Software

  • 1 cup water
  • 1 cup tomato puree
  • 3/4 cup bulgur
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1 1/2 teaspoons kosher salt
  • 1 1/4 teaspoons hot sauce, optional, but highly recommended
  • 4 scallions, chopped
  • 1 cup seeded and chopped tomatoes
  • 1 cup peeled, seeded, and diced cucumber
  • 3/4 cup diced green bell pepper
  • 3 tablespoons chopped cilantro leaves
  • 1.5 cups tomato juice
ACTIVE TIME: 25 minutes
TOTAL TIME: 1 hour 45 minutes

Procedure

  • Bring the water and tomato puree to a boil in a microwave safe bowl, approximately 5 minutes on high.
  • Carefully pour the tomato mixture over the bulgur in a medium mixing bowl and cover with plastic wrap for 20 minutes.
  • After 20 minutes, fluff the bulgur with a fork. Add the balsamic vinegar, garlic, cumin, salt, hot sauce, scallions, tomatoes, cucumbers, green pepper, and cilantro, and toss with the bulgur. Add tomato juice and stir to combine. Chill for 1 hour before serving.
