Orca Apricot Brandy
Tart fresh apricots and sweet apricot jam combine in this balanced and complex brandy I made in honor of the 40th anniversary of Jaws. ACTIVE TIME: 5 minutes
TOTAL TIME: 7 days 5 minutes
Yield: 2 1/2 cups
- 5 ounces dried apricots, chopped
- 3 ripe apricots, quartered
- 3 tablespoons apricot jam
- 1/2 cup water
- 18 fluid ounces vodka
Place water and jam in a microwave-safe container and heat on high for 1 minute. Stir, then heat again until the syrup mixture boils, about 30 seconds.
Meanwhile, place ripe and dried apricots in a clean bottle or Ball-style mason jar.
Pour syrup over apricots, then top with the vodka. Cover and allow to steep for 7 days at room temperature.
Strain through cheesecloth and enjoy straight up or in any number of classic cocktails like a Golden Slipper or a Yellow Parrot.
