Salt Roasted Shrimp

So simple and so delicious. Not only does the salt season the shrimp, it provides heat transfer in a very unusual manner, which renders the little critters crisp and succulent without washing away any shrimpy flavor.

  • 4 pounds rock salt
  • 1 pound (20- to 24-count) shrimp, heads on

Procedure

  • Divide the salt evenly between two 9- by 13-inch metal pans.
  • Heat oven to 400ºF and place pans of salt in oven to heat. When the oven reaches temperature, continue heating the salt for 15 minutes.
  • Put the shrimp on top of the salt in one of the pans, then cover with all of the salt from the second pan. The shrimp should be evenly and completely covered. Roast for 8 minutes. Remove from oven and check one shrimp for doneness — the shrimp should be white and pink in color instead of grey. If not done, return to oven for 1 to 2 minutes. Serve immediately.
