ACTIVE TIME: 20 minutes minutes
TOTAL TIME: 2 hours hours 40 minutes minutes
Yield: 20 dates
- 1/2 cup low-sodium soy sauce
- 20 pitted Deglet Noor dates
- 1/4 cup canned water chestnuts, cut into matchsticks
- 7 slices bacon (not thick-cut), cut into 3-inch lengths
Combine the soy sauce and 1/2 cup of water in a small bowl and soak the dates for 2 hours.
Heat a toaster oven to 450ºF and place a wire rack in a quarter-sheet pan or use the pan that came with your toaster oven, if applicableIf you don’t have a toaster oven you can use a regular oven..
Drain and then open the dates by using a pair of scissors to cut a lengthwise slit in each date.
Stuff each date with 2 to 3 pieces of water chestnut and wrap with a piece of bacon. Place the wrapped dates on the rack, bacon ends down, and gently press to anchor.
Bake until the bacon is brown and crispy, about 15 minutes. Cool for 5 minutes before serving.
