Water Chestnut and Soy Devils on Horseback

Classic Devils on Horseback with an Asian twist. Water chestnuts offer a wonderful textural contrast while soy sauce brings funk and flavor to the party.

Software

  • 1/2 cup low-sodium soy sauce
  • 20 pitted Deglet Noor dates
  • 1/4 cup canned water chestnuts, cut into matchsticks
  • 7 slices bacon (not thick-cut), cut into 3-inch lengths

  • Toaster oven

Procedure

  • Combine the soy sauce and 1/2 cup of water in a small bowl and soak the dates for 2 hours.
  • Heat a toaster oven to 450ºF and place a wire rack in a quarter-sheet pan or use the pan that came with your toaster oven, if applicableIf you don’t have a toaster oven you can use a regular oven..
  • Drain and then open the dates by using a pair of scissors to cut a lengthwise slit in each date.
  • Stuff each date with 2 to 3 pieces of water chestnut and wrap with a piece of bacon. Place the wrapped dates on the rack, bacon ends down, and gently press to anchor.
  • Bake until the bacon is brown and crispy, about 15 minutes. Cool for 5 minutes before serving.
