Easy Tofu Dressing

Yield: 3 cups
- 12 ounces firm silken tofu
- 1/2 cup buttermilk
- 1/4 cup ketchup
- 2 tablespoons sweet pickle relish
- 1 tablespoon Dijon mustard
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Add all of the ingredients to a blender and combine until smooth. Store in an airtight container in the refrigerator for up to 1 week. Serve as a dressing for a salad, as a sauce for a hamburger, or a dip for vegetables.
