Yield: 10 servings
- 4 ounces maraschino cherries, about 20 cherries
- 1 1/2 cups pineapple, cut in 1/2-inch chunks
- 1 cup clementine or mandarin orange segments, 4-6 oranges
- 1 1/2 cups red apple (such as cosmic or honey crisp), cut in 1/2-inch chunks
- 8 ounces green grapes, cut in half, about 40 grapes
- 1 cup sweetened shredded coconut
- 1/2 cup heavy cream
- 1/4 cup sour cream
- 1 tablespoon powdered sugar
- 1 tablespoon freshly squeezed lemon juice
- pinch kosher salt
- 4 ounces homemade marshmallows, cut in 1/2-inch pieces (may sub store bought mini marshmallows)
Rinse the maraschino cherries in a mesh strainer or colander under cold running water. Lay them out on a few layers of paper towels and pat dry without squishing them. Cut in half and place in a large mixing bowl.
Add the pineapple, orange segments, apple, grapes, and coconut to the bowl with the cherries and mix to combine.
Combine the heavy cream, sour cream, powdered sugar, lemon juice, and salt in the bowl of a standing mixer with the whisk attachment. Mix on medium-high speed until soft peaks form, 3-4 minutes.
Pour the cream mixture over the fruit, add the marshmallows, then fold everything together with a rubber spatula. Cover the bowl with plastic wrap and refrigerate for 1 hour before serving.
