Slow Cooker Clotted Cream

Classic English clotted cream is easier to make from scratch than you might think. All you need is a slow cooker and some patience.
This recipe first appeared in Season 6 of Good Eats.

TOTAL TIME: 13 hours 5 minutes
Yield: 2 cups

Software

  • 1 quart pasteurized cream, not ultra-pasteurized

Specialized Hardware

  • Slow cooker

Procedure

  • Pour the cream into a slow cooker and set the cooker to low. Leave the cream for 5 to 6 hours. The cream is done when the color has deepened to almost yellow and a crusty cap has formed on the surface.
